Will lactic acid hurt my cycling performance?

Q. I’ve been reading food labels and just noticed that some of my favorite chips contain lactic acid. Will this hinder my performance?–Eric White, AL

A. The fat may slow you down, but the lactic acid is nothing to worry about. Although it’s exactly the same muscle-burning metabolic waste you produce when you’re cranking full-throttle, lactic acid in your food won’t affect your nerve endings or performance, says long-distance cyclist and sports nutritionist Ellen Coleman, author of Eating for Endurance. “The lactic acid in food is usually used as a flavoring and preservative. When you eat it, your body converts lactic acid into energy. One molecule of lactic acid provides about half the energy of one molecule of glucose.”
